This recipe book features my recipe and those of 9 other bloggers all incorporating Jazz apples into their favourite bakes and makes. If, like me, you’re a fan of baking and love a bit of cake too, then trying my new recipe for apple cake might be just your bag. Apple cake is revered in Germany, and this moist apfelkuchen is super moist, flavourful and delicious, and the fact that I use Jazz apples in this recipe means that they give a sweet flavour rather than the more tart taste of green apples, and makes this cake ideal for a Summer snack.

Not only is this cake pleasing to the eye and looks like a professional bake, but it’s so simple to bake which means that even my kids have a go at this recipe. Jam packed with juicy Jazz apples, which add both moisture and flavour, it is a subtly sweet recipe that just oozes fruity vibes.

Jazz Apple Cake Recipe
Serves 12

Prep time – 10-15 mins
Cook time – 35-40 mins
Ingredients
600g JAZZ Apples (around 4 apples)
200g sugar
200g butter
4 eggs, beaten
200g self-raising flour
Juice of one lemon
1 tsp baking powder
1 tsp vanilla extract
2 tbsp milk
Sugar, to sprinkle

Method
1. Heat oven to 180C/fan 160C/gas 4.

2. Butter and flour a flan oven dish to stop the edges from sticking.

3. Peel, core and thinly slice the apples then squeeze the lemon juice over and set to one side. The lemon juices stops the apples from browning.

4. Cream the butter, sugar, eggs, vanilla extract, sieved flour and baking powder into a large bowl and mix well until smooth.

5. Put half of the apples into the mixture and fold until combined. I like to cut these apple slices up a little more as they distribute better in the mixture then.

6. Pour into the oven dish and flatten out.

7. Arrange the other half of the apples over the top of the mixture and sprinkle over a little sugar.

8. Bake for 35-40 mins until golden and springy to the touch, or until a skewer comes out clean.

  1. We do love apple cake, especially as we have a mini Bramley and a mini Breaburn tree in our garden! My wife makes a similar cake to this. I will compare them later…
