Slow Cooker Beef Curry Recipe

I don’t know about you, but sometimes I get a little bored eating chicken all the time. Chicken curry, wraps, burgers – I guess we all get stuck in the rut of thinking chicken is the best meat to cook with. But beef is also such a versatile meat, and my slow cooker beef curry is the perfect way to warm up on a cold evening. Or simple to do if you don’t fancy cooking all too much. Just a quick browning, and bung it in the slow cooker for hours.

  • Serves: 4 adults 
  • Prep time: 10 minutes
  • Cook time: at least 6 hours

Ingredients

  • 700g diced beef
  • 2 cloves garlic, chopped
  • 1 onion, finely sliced
  • 1 tbsp curry powder
  • 1 tsp chilli powder (or more if you prefer spicier)
  • 2 tins chopped tomatoes
  • 1 pint beef stock
  • Rice – I like to use basmati rice but you can use whichever rice you like

Method

  • Heat a little oil in a frying pan over medium heat, and brown the beef on all sides. Remove and set to the side.
  • Now use the same frying pan, add in the onion and garlic, and cook for a couple of minutes until softened.
  • Season with the curry powder and chilli powder, and lower the heat for 2 minutes.
  • Add the beef and the contents of the frying pan to the slow cooker, and then mix in the 2 tins of tomatoes and beef stock and stir to combine everything.
  • Cover and cook for at least 6 hours (I try to leave for 8 hours), and for the last 15 minutes, remove the lid so that the sauce can thicken.
  • Serve with rice and naan bread, or whatever you prefer with it.

Also, this recipe is so easy to change up. Got fresh chillies? Use them instead. Don’t like onions? Puree them first, and I can guarantee they’ll give you the flavour you need without seeing them. Don’t like chunky tomatoes? Make it with passata instead.
