If there is one treat that disappears in minutes in our house, it is rocky road. And my Mini Eggs Rocky Road is no exception, its a big hit with all members of the family. This recipe is rich, crunchy and full of chocolate. It is also very easy to make.

  • Cut the Mini Eggs in half. This can be a bit tricky as they are hard, so use a sharp knife and be careful. If you want a more crushed and uneven feel to your eggs place them in a food bag and give them a couple of gentle taps with a rolling pin.
  • Melt the milk chocolate, dark chocolate, butter and golden syrup together in a large bowl over a pan of gently simmering water. Stir until smooth. You can also melt it in the microwave in short bursts if you prefer.
  • Remove from the heat and stir in the biscuits, marshmallows and most of the Mini Eggs. Keep a few aside for the top.
  • Spoon the mixture into your lined tin and press it down firmly with the back of a spoon.
  • Sprinkle the remaining Mini Eggs over the top and gently press them in, drizzle more melted chocolate over the top if you want it to be extra chocolatey.
