Bank Holiday Baking Fun – Cherry Jammy Biscuits

Cherry Jammy Biscuits Recipe


Round cherry jammy biscuits with heart-shaped cut-outs, filled with dark jam and dusted with icing sugar, are stacked on a wooden surface—perfect for Bank Holiday baking fun.
  • Makes – 10 – 12 biscuits
  • Prep Time – 10 – 15 minutes and 30 minutes chill time
  • Cooking Time – 10 -12 minutes

Ingredients:

250g Plain Flour
200g Unsalted Butter – make sure it’s cold and cut up into cubes
100g Icing Sugar
1 Egg Yolk
Santa Rosa Cherry Jam*

Method:

  1. Put the flour, butter and icing sugar in a bowl and rub together until the mixture looks like breadcrumbs.
  2. Add the egg yolk to the bowl and mix until all the ingredients are combined to make a dough. If needed you can add more flour and icing sugar.
  3. Wrap the dough in clingfilm and place in the fridge for 30 mins to chill.
  4. Preheat your oven to 170C and prepare two baking trays with baking parchment 
  5. Place the dough onto a floured surface and roll out. Make sure that it’s not too thin (about 1cm is ideal)
  6. Cut out your biscuits using a cookie or scone cutter. I used a 5.5cm frilled edge cutter but you could make them bigger or smaller if you wished.
  7. Using a small shaped cutter (I used a heart but you could use a flower, star, square or any other shape you like) on one half of the biscuits make a smaller cut out in the middle of them.
  8. Place the biscuits on the trays and bake for 10 – 12 minutes or until they are lightly golden – keep an eye on them as they turn quickly once they start to colour.
  9. Take out of the oven and leave to cool for a little while – 5 – 10 minutes should be plenty
  10. Put a teaspoon of jam in each biscuit (on full bottom and one open top with a shape cut out) The jam I use has fruit pieces in and I didn’t remove them as both my children and I like them but if you don’t like the pieces or want them in your biscuits you can easily take them out.
  11. Dust with icing sugar and enjoy with a cup of tea
