Pecorino Chicken Goujons with Pasta
With everything that is happening at the moment, I seem to have found my love for cooking again. I’ve been trying new meals every day that we’ve been stuck at home, and my pecorino chicken goujons are a firm favourite with adults and children alike.
I adore Italian food and so always opt for making recipes based around Italian flavours, and one of my absolute loves is pecorino cheese. This sharp and salty flavour is ideal for grating over pasta dishes, and can be combined into any recipe to give a salty edge.

So, to get on with my recipe, the main focus of this dish is the pecorino chicken goujons, and you can serve these lightly-breaded chicken goujons with pasta and a tomato based sauce – or anything really, but I love them with pasta.
For The Pecorino Chicken Goujons
500g mini chicken breast fillets
100g panko breadcrumbs
100g freshly grated Pecorino cheese
Pinch of salt & pepper
Olive oil cooking spray
Plain flour
2 eggs
Method
- Preheat oven to 180°C
- In one bowl, combine panko, pecorino cheese, salt and pepper. Another bowl is for flour, and lastly a bowl with the 2 eggs whisked.
- One at a time, dip chicken breast in flour, then the egg mixture, then into panko mixture to coat evenly, making sure to press firmly so mixture sticks.
- Arrange chicken on an oven tray and spray chicken lightly with cooking spray.
- Bake chicken for around 15 minutes or until cooked thoroughly.
For the Pasta and Sauce
300g linguine
1 tbsp olive oil
2 onions, chopped
2 garlic cloves, crushed
1 tbsp tomato purée
1 tin chopped tomatoes
1 jar of passata
1 tbsp oregano
Method
- Boil pasta for around 12-15 minutes until tender.
- Heat the olive oil in a pan and add the onions, cooking on a low heat until soft.
- Add the garlic and tomato purée and let them cook out for a few minutes.
- Add in the rest of the ingredients, season generously and let simmer for 15 minutes.
- Combine the sauce and pasta together.
Serve pasta immediately, topped with the pecorino chicken goujons, and a good helping of grated Auricchio Pecorino Romano cheese over the top.
