How To Make Raspberry and Coconut Dairy, Gluten and Soy Free Ice Lollies

As someone who is conscious of what she eats, I also like to make sure that my kids get a mixed and varied diet too. Milk is a weird one for me as, even though I can enjoy it every now and then, too often it makes me bloat and leaves me with that nasty feeling that stops me using it often.
I regularly use coconut milk instead of cows milk when I can and so when Vita Coco asked me to use their coconut milk to create some ice lollies, I knew it would be the perfect time to see what we could come up with.

Vita Coco is the best-selling coconut brand in the UK and its coconut milk is a great non-dairy alternative that’s smooth, sweet and filled with added electrolytes. Coconut milk is 100% dairy, gluten and soy free, so is perfect for people who have an intolerance to these. With the added benefit of no added sugar and no carrageenan.
I mean, Vita Coco coconut milk can literally go wherever cows milk does, my husband even likes it in his coffee in place of milk and sugar (the sweetness of the coconut milk means he doesn’t need sugar) and it’s like pure perfection mixed into hot chocolate.

So, to help us on our way to creating some ice lollies, we were sent an ice cream maker, some lolly moulds, some extra items and the Vita Coco coconut milk.
And here’s the recipe:
What You’ll Need:
Vita Coco coconut milk
1tbsp raw honey
Vanilla Extract (couple of drops)
Raspberries (can use fresh but I used dried)

How To Make
1. Mix the Vita Coco coconut milk, raw honey and vanilla extract together and then pour into the ice cream maker. Switch it one an leave for a good half hour to do its stuff.
2. Crush up some of the raspberries and add to the mix, giving it a stir in.
3. Pour into the moulds and set in the freezer for a few hours.
4. Enjoy!!!
It’s really that simple. In the end, we created 2 variants – this one, and then we also added some crushed raspberries to the original mix to give a stronger flavour and some cute pink lollies.
