Gooey Chocolate Brownies Recipe

Another day of lockdown and another recipe up on my blog. Today I've gone for something chocolatey as to be honest, who doesn't need a bit of chocolate at the moment, and these brownies are a great way to keep yourself occupied whilst stuck at home, and a treat to eat afterwards.

I've been trying out a few new recipes at the moment and one of our favourites is my gooey chocolate brownies which are squidgy in the middle with just the right amount of crunch on the edges. 185g butter
275g sugar
3 eggs
85g plain flour
40g cocoa powder
200g chocolate*

1.  Pre-heat the oven to around 17°C.
2.  Melt butter and half of the chocolate together and then leave to cool down for 15 minutes.
3.  In a bowl, cream the eggs and sugar together with a mixer for around 3 to 4 minutes, until whipped and fluffy.
4.  Pour the cooled butter/chocolate mixture slowly into the eggs mixture and fold gently.
5.  Slowly fold in the flour and cocoa powder until combined. 
6.  Cut the rest of the chocolate into chunks and add to the mix.
7.  Pop into the oven in a greaseproof lined tin for around 30 minutes.
8.  Take out and leave to cool for 20 minutes before removing it from the tin and cutting into pieces. Take it out of the tine too early and it'll crack and breakup.

You want this to come out slightly wobbly in to middle to give that squidgy brownie texture in the middle. 

Tip* I use a mixture of chocolate in mine. I melt a bar of dark chocolate with the butter and use darker milk for the chunks. This gives a less harsh taste unlike using too much dark chocolate.
